- 2 cups jackfruit, shredded (or 2 cups soy curls)
- 1 tablespoon mustard
- 1/2 cup vegan mayo
- 1 teaspoon garlic powder
- Salt to taste
- 1 cup celery, chopped
- 1 teaspoon paprika
- 1/2 cup red onion, diced
- 1 teaspoon paprika
- 1 teaspoon poultry-style seasoning
Instructions
1. If using jackfruit, drain and rinse. In a pot, lightly sauté the jackfruit in a little oil for 5-10 minutes, until slightly browned. If using soy curls, rehydrate in hot water for about 10 minutes and then drain.
2. In a large bowl, combine the jackfruit or soy curls with vegan mayo and mustard. Mix until well combined.
3. Add chopped celery, red onion, garlic powder, paprika, poultry-style seasoning, and salt. Mix everything thoroughly. Adjust seasoning as preferred.
